Oh, the Peposo is something easy to do.
Red wine (a lot), garlic and lots of black pepper (the entire peppercorns, not crushed) meat (NOT from a high quality cut).
Optionally a little bit of tomato sauce.
Cook everything for 4+ hours. More time is better. That's it.
And I forgot to write salt, obviously.
The wine can be a cheap one.
